7 servings

7
  • 1 1/4 cups self-rising flour
  • 1 tablespoon sugar
  • 2 eggs, lightly beaten
  • 1 cup milk
  • 2 tablespoons melted butter
  • Pinch of salt
  • Oil, for greasing the pan
  • 4 tablespoons cocoa powder
  • 2 tablespoons margarine
  • A little cold water, for the sauce

Directions

  1. 1

In a large bowl, mix the flour, sugar and salt together.

  2. 2

In a second bowl, whisk the eggs, milk and melted butter.

  3. 3

Pour the wet mixture into the dry ingredients and stir briefly — a few lumps are exactly what you want.

  4. 4

The batter should be fairly thick and fall slowly off the spoon; loosen it with a splash of milk if it feels too dense.

  5. 5

Heat a lightly oiled pan and pour about 1/4 cup of batter into the centre.

  6. 6

Cook until bubbles appear on the surface, flip, then give it another minute. Keep warm.

  7. 7

For the sauce: melt the margarine over low heat, stir in the cocoa, then add the water a little at a time, whisking constantly.

  8. 8

Let it thicken for a few minutes and pour over the warm pancakes — too much water and the sauce will never set.

💡 Chef's Tip

Don't overmix the batter — that's the trick to really fluffy pancakes. For the sauce, add the water spoon by spoon and stop as soon as it coats the back of a spoon; too thin and it stays liquid forever.
