Passion Fruit Mousse
An airy and delicate mousse flavored with passion fruit, enriched with condensed milk and topped with whipped egg whites. A gourmet tropical dessert, light and flavorful, that will delight all palates.

- 0.42 oz unflavored gelatin
- 1/4 cup warm water
- 1 cup granulated sugar
- Pulp of 1 fresh passion fruit
- 1 can (12.7 fl oz) sweetened condensed milk
- 6 large egg whites
- 1 sprig fresh mint (for garnish)

Pour the gelatin into a small bowl with the warm water. Let stand for 5 minutes to allow the gelatin to soften.

In a medium saucepan, combine the passion fruit pulp, sugar, and softened gelatin. Heat over medium-high heat, stirring regularly, until the mixture is smooth and homogenous (do not let it boil).

Remove from heat and let cool completely at room temperature.

Pour the condensed milk into the cooled mixture and stir well.

In a clean bowl, beat the egg whites using an electric mixer until stiff peaks form.
