🛒 Ingredients

20 servings

20
  • 2 tablespoons unflavored powdered gelatin
  • 3 tablespoons cold water
  • 1 tablespoon corn glucose syrup
  • 1 tablespoon vegetable shortening
  • 500 g (4 cups) sifted powdered sugar
  • Gel food coloring (optional)

Directions

  1. 1

Pour the cold water into a small bowl and sprinkle the gelatin evenly over the surface. Let it bloom for 1 minute without stirring.

  2. 2

In a heatproof bowl set over a pot of simmering water (double boiler), combine the shortening, glucose syrup, and bloomed gelatin. Stir gently over low heat until fully melted and smooth — do not let it boil.

  3. 3

Sift the powdered sugar onto a clean work surface and make a well in the center. Pour the warm gelatin mixture into the well and gradually incorporate the sugar, working from the edges inward.

  4. 4

Knead the mixture vigorously until a smooth, pliable dough forms. If too soft, add more powdered sugar a little at a time until the right consistency is reached.

  5. 5

Add gel food coloring and knead until the color is fully and evenly incorporated.

  6. 6

Roll out the paste with a rolling pin on a surface lightly dusted with powdered sugar, then drape over your cake and smooth into place.

💡 Chef's Tip

Wrap unused paste tightly in plastic wrap — it keeps for up to 2 weeks at room temperature. If working in a warm kitchen, dust your hands with powdered sugar to prevent sticking.
