🛒 Ingredients

80 servings

80
  • 3 kg ripe guavas
  • 1 kg caster sugar
  • Juice of half a lemon
  • A splash of water (for blending)

Directions

  1. 1

Peel the guavas and trim both ends.

  2. 2

Blend the flesh with a little water until completely smooth.

  3. 3

Strain the purée through a fine-mesh sieve to remove all seeds.

  4. 4

Pour into a large heavy-bottomed saucepan and bring to a boil over medium heat.

  5. 5

Cook for about 40 minutes, stirring occasionally, until most of the water has evaporated and the mixture thickens.

  6. 6

Stir in the sugar and lemon juice until fully incorporated.

  7. 7

Continue cooking over low heat for 30 more minutes, stirring frequently, until the paste pulls cleanly away from the sides of the pan.

  8. 8

Remove from heat and allow to cool completely before transferring to jars.

💡 Chef's Tip

Test the set by dropping a small spoonful onto a cold plate — if it firms up within seconds, it's ready. Store in sterilised jars for up to 3 months in a cool, dry place.
