🛒 Ingredients

25 servings

25
  • 500 g white chocolate, chopped
  • 1 can sweetened condensed milk (about 14 oz / 397 g)
  • 3 cartons heavy cream (about 7 oz / 200 g each)
  • 1 tablespoon butter
  • 2 packages Negresco sandwich cookies (or Oreos)

Directions

  1. 1

Melt the butter in a saucepan over medium heat. Pour in the sweetened condensed milk and bring to a boil, stirring constantly, until it thickens to a soft fudge-like consistency that pulls away from the pan.

  2. 2

Cook for 2 more minutes, stirring without stopping.

  3. 3

Remove from the heat and let cool for 1 minute. Add 200 g of the chopped white chocolate and stir until completely melted.

  4. 4

Stir in 2 cartons of heavy cream and mix until smooth and even.

  5. 5

In a medium deep dish, spread a thin layer of the cream and cover with cookies — whole or broken up (broken cookies cover more evenly).

  6. 6

Repeat layers of cream and cookies, finishing with a cookie layer. Chill for 15 minutes.

  7. 7

Melt the remaining chopped white chocolate over a bain-marie (or in the microwave), stir in the last carton of cream, then pour over the final cookie layer to coat it completely.

  8. 8

Refrigerate for 2 hours, or freeze it if you prefer — it's delicious either way.

💡 Chef's Tip

Take the dish out 10 minutes before serving for clean slices. The pavé keeps for up to 3 days in the fridge, covered. For a richer flavour, swap half the white chocolate for milk chocolate.
