  • 1 can sweetened condensed milk (395 g)
  • 800 ml whole milk (2× the volume of the can)
  • 2 egg yolks
  • 1 tablespoon cornstarch
  • 5 tablespoons unsweetened cocoa powder
  • 200 g butter biscuits (shortbread-style)

Directions

    In a saucepan, combine the condensed milk, whole milk, egg yolks, and cornstarch. Whisk until fully blended.

    Cook over low heat, stirring constantly, until the cream thickens and coats the back of a spoon, about 8 to 10 minutes.

    Remove from heat. Pour half the cream into a rectangular dish and lay the butter biscuits in a single, even layer on top.

    Stir the cocoa powder into the remaining cream and mix vigorously until you have a smooth, uniform chocolate cream. Pour over the biscuit layer.

    Crush a handful of butter biscuits into fine crumbs and sprinkle evenly over the top to finish the pavé.

    Cover with plastic wrap and freeze for at least 4 hours. Slice and serve straight from the freezer.

💡 Chef's Tip

For extra indulgence, spread a layer of whipped cream between the biscuits and the chocolate cream. Speculoos spiced cookies also make a wonderful substitute for a warming twist.
