🛒 Ingredients

20 servings

20
  • 500 g (1 lb) ground beef (chuck)
  • 2 ripe tomatoes, seeded and finely chopped
  • 1 medium onion, finely grated
  • 2 garlic cloves, minced
  • 4–6 tablespoons all-purpose flour (to bind)
  • 1 teaspoon Dijon mustard
  • Salt and freshly ground black pepper, to taste
  • A handful of fresh flat-leaf parsley, chopped
  • A few sprigs of fresh chives, finely sliced
  • Olive oil, to grease the baking dish

Directions

  1. 1

Preheat your oven to 200 °C / 400 °F. Lightly grease a baking dish with olive oil.

  2. 2

In a large bowl, combine the ground beef, chopped tomatoes, grated onion, minced garlic, Dijon mustard, parsley, and chives. Season well with salt and pepper.

  3. 3

Add flour one tablespoon at a time, mixing with your hands after each addition, until the mixture is firm enough to hold its shape when rolled into balls.

  4. 4

Shape the mixture into walnut-sized meatballs (about 3 cm / 1.2 inches in diameter) and arrange them in the greased baking dish, leaving a little space between each.

  5. 5

Bake for 30–35 minutes, turning halfway through, until the meatballs are nicely browned and cooked through.

  6. 6

Serve hot with a green salad, roasted vegetables, or crusty bread. Enjoy!

💡 Chef's Tip

For extra juicy meatballs, stir in a tablespoon of sour cream before shaping. You can also spoon over a simple tomato sauce for the last 10 minutes of baking.
