🛒 Ingredients

5 servings

5
  • 2.2 lbs (1 kg) chicken drumsticks
  • Juice of 1 lemon
  • 1 tbsp all-purpose seasoning (mild)
  • 3 tbsp brown sugar
  • 1 cup water (250 ml)
  • 1 tsp cornstarch
  • 1 cup (250 g) ketchup
  • 4 tbsp yellow mustard
  • 2 tbsp apple cider vinegar
  • 2 tbsp Worcestershire sauce
  • 2 tbsp hot sauce
  • Fresh chives for garnish

Directions

  1. 1

Score the chicken drumsticks all over with a sharp knife to help the marinade penetrate deeply into the meat.

  2. 2

In a bowl, combine the all-purpose seasoning with lemon juice and mix into a paste. Rub evenly over the chicken, cover with plastic wrap, and refrigerate for 15 minutes.

  3. 3

Preheat your oven to 430°F (220°C). Line a baking sheet with aluminum foil and arrange the drumsticks with a small gap between each one.

  4. 4

Roast for approximately 1 hour 30 minutes, or until the chicken begins to turn golden brown.

  5. 5

While the chicken roasts, make the BBQ sauce: melt the brown sugar in a saucepan over medium heat without stirring until fully caramelized and amber in color. Stir in the ketchup, mustard, apple cider vinegar, Worcestershire sauce, and hot sauce. Dissolve the cornstarch in cold water, add to the pan, and simmer for 5 minutes until thickened.

  6. 6

Generously brush the BBQ sauce over the drumsticks and return to the oven until deeply glazed and golden.

  7. 7

Serve immediately, topped with freshly chopped chives.

💡 Chef's Tip

For extra smokiness, stir half a teaspoon of smoked paprika into the BBQ sauce. Don't stir the sugar as it melts — wait until it's fully liquid and amber before adding the other sauce ingredients to prevent crystallization.
