🛒 Ingredients

6 servings

6
  • 6 large potatoes
  • 1 chicken breast
  • 1 chicken bouillon cube
  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 3 garlic cloves, crushed
  • 1/2 can tomato sauce (about 200 g)
  • Dried oregano and fresh parsley to taste
  • Salt to taste
  • 100 g shredded mozzarella
  • 1/2 cup cream cheese (Philadelphia-style)
  • Sliced black olives to taste
  • 1 can sweet corn (280 g)
  • Diced smoked bacon, pan-fried
  • 1 cup heavy cream (200 g)

Directions

  1. 1

Boil the potatoes in salted water until tender. Drain and set aside. Cook the chicken breast in a pressure cooker with water, salt, and the bouillon cube. Reserve some of the cooking broth. Let cool, then dice or shred the chicken.

  2. 2

Heat olive oil in a skillet over medium heat. Sauté the onion and garlic until lightly golden. Add the chicken, tomato sauce, oregano, parsley, salt, and a splash of reserved broth. Simmer for a few minutes, stirring well, then remove from heat.

  3. 3

Place each potato in an individual ramekin. Cut in half and gently press down the center to create a well. Layer with mozzarella, cream cheese, a drizzle of heavy cream, a spoonful of chicken filling, olives, corn, and crispy bacon. Serve immediately.

💡 Chef's Tip

The chicken filling can be made a day ahead and refrigerated. Add smoked paprika or chili flakes for extra depth. Swap bacon for sautéed mushrooms for a meat-free option.
