🛒 Ingredients

10 servings

10
  • 1 kg (2.2 lbs) pork loin, cut into cubes
  • 1 lemon
  • 1 ripe tomato, peeled and diced
  • 1 onion, cut into thick strips
  • 3 garlic cloves, minced
  • 1 packet (approx. 250 g) ready-made barbecue sauce
  • 125 ml (½ cup) water
  • Salt to taste
  • Fresh or dried herbs (thyme, parsley, oregano — optional)
  • 1 tbsp cornstarch (if needed to thicken)

Directions

  1. 1

Cut pork loin into 3 cm cubes. Season with the juice of half a lemon and salt. Marinate in the refrigerator for at least 6 hours or overnight.

  2. 2

Peel the tomato, remove the seeds, and dice it. Slice the onion into thick strips. Crush the garlic cloves.

  3. 3

Place the marinated pork, tomato, onion, and garlic in the pressure cooker. Add the water and the juice from the remaining lemon half.

  4. 4

Pour in the barbecue sauce and stir to coat the meat evenly.

  5. 5

Seal the pressure cooker and cook over medium heat. Once the valve starts releasing steam, cook for 15 minutes.

  6. 6

Release pressure safely according to your cooker's instructions. Taste and adjust salt.

  7. 7

If the sauce is too thin, dissolve 1 tbsp of cornstarch in cold water and stir it in over low heat until thickened.

  8. 8

Sprinkle with fresh herbs and serve hot with white rice, mashed potatoes, or roasted vegetables.

💡 Chef's Tip

For extra depth of flavor, sear the pork cubes in a hot skillet before adding them to the pressure cooker. Swap the store-bought barbecue sauce for a homemade blend of ketchup, honey, apple cider vinegar, and smoked paprika.
