🛒 Ingredients

5 servings

5
  • 1 whole chicken, cut into pieces (about 2 kg), or bone-in thighs and drumsticks
  • Juice of 1 lemon or 3 tbsp white vinegar
  • 6 garlic cloves, minced
  • 4 tbsp olive oil
  • 1 can (330 ml) lager beer, at room temperature
  • 2 tbsp salt, freshly ground black pepper to taste
  • Fresh herbs: chives and flat-leaf parsley, finely chopped
  • 1 large onion, diced
  • Vegetable oil for frying (if using the fry method)

Directions

  1. 1

In a large bowl, whisk together the olive oil, minced garlic, diced onion, lemon juice (or vinegar), salt, pepper, and fresh herbs. Add the chicken pieces and toss well to coat.

  2. 2

Cover and refrigerate for at least 1 hour. For the best flavor, marinate overnight.

  3. 3

Oven method: arrange the marinated chicken pieces in a baking dish, pour the remaining marinade over the top, then add the room-temperature beer.

  4. 4

Roast in a preheated oven at 350 °F (180 °C) for 45–50 minutes until golden brown and cooked through.

  5. 5

Fry method: lift the chicken pieces from the marinade, let the excess drip off, and fry in hot oil until deeply golden and fully cooked inside.

💡 Chef's Tip

Using room-temperature beer is key — cold beer can shock the meat and make it tougher. For extra-crispy skin in the oven, crank the heat to 400 °F (200 °C) for the last 10 minutes.
