🛒 Ingredients

5 servings

5
  • 1 kg chicken breast fillets
  • 2 eggs
  • Breadcrumbs, as needed
  • 200 g mozzarella, sliced
  • Juice of 1 lemon
  • 1 tsp salt
  • Fresh parsley, to taste
  • Dried oregano, to taste
  • 2 tbsp soy sauce
  • 1/2 onion
  • 2 tomatoes
  • 1 can tomato sauce
  • 1 tsp crushed garlic
  • Salt, to taste

Directions

  1. 1

Season the chicken fillets with salt, lemon juice, soy sauce, parsley, and oregano. Let marinate for 15 minutes.

  2. 2

Beat the eggs with a pinch of salt in a bowl. Dip each fillet into the egg, then coat thoroughly with breadcrumbs, pressing firmly so the crust sticks.

  3. 3

Lightly grease a baking dish, arrange the fillets and bake at 200 °C (390 °F) for 20 minutes. Flip and bake for another 20 minutes until golden.

  4. 4

While the chicken bakes, sauté the diced onion, garlic, and tomatoes in a drizzle of oil for 5 minutes. Stir in the tomato sauce and simmer on low heat for 10 minutes.

  5. 5

Remove chicken from the oven, layer mozzarella slices on top, and spoon the tomato sauce generously over each fillet.

  6. 6

Return to the oven for 5 minutes until the mozzarella is melted and bubbly. Serve immediately with white rice and shoestring fries.

💡 Chef's Tip

Add a tablespoon of grated Parmesan to the breadcrumbs for extra depth of flavour. The tomato sauce can be made a day ahead to save time.
