  • 1 tablespoon light margarine
  • 1/2 onion, finely chopped
  • 2 teaspoons freshly grated ginger
  • 500 g (1 lb) chicken breast, cut into cubes
  • 1/2 cup dry white wine
  • 1/2 cup water
  • 2 celery stalks, diced
  • 1 large green apple, unpeeled, diced
  • 1 cup light mayonnaise

Directions

    Melt the margarine in a medium saucepan over medium heat. Add the chopped onion and grated ginger, and sauté for 1 minute until fragrant.

    Add the chicken cubes and cook, stirring occasionally, until golden brown on all sides.

    Pour in the white wine and water. Simmer over medium heat for about 10 minutes, or until the chicken is cooked through and tender.
