🛒 Ingredients

5 servings

5
  • 500 g chicken breast, seasoned and cut into 2 cm cubes
  • 300 g okra, sliced into 2 cm rounds
  • 2 small tomatoes, seeded and diced
  • 1 medium onion, finely chopped
  • Salt and black pepper to taste
  • A drizzle of sunflower oil

Directions

  1. 1

Heat a skillet over high heat with a drizzle of oil. Add the chicken cubes without stirring and let them sear undisturbed until one side is deeply golden and forms a crust.

  2. 2

Add the diced tomatoes and chopped onion. Flip the chicken and cook, stirring occasionally, until golden on all sides.

  3. 3

Add the okra slices, stir gently, and cook over medium heat until the pan juices reduce slightly and the okra is tender.

  4. 4

Adjust seasoning, remove from heat, and serve immediately with white rice or your favourite side.

💡 Chef's Tip

Resist moving the chicken too soon — letting it sit builds a rich golden crust that locks in flavour. Adding okra at the end keeps it tender without turning too slimy.
