🛒 Ingredients

15 servings

15
  • 1 kg (about 2 lbs) chicken thighs or drumsticks
  • 2 tbsp mayonnaise
  • 2 tbsp Dijon mustard
  • 1 pinch of dried herbs (herbes de Provence or Italian seasoning)
  • 1 garlic clove, finely minced (optional)
  • 1 cup (100 g) fine breadcrumbs
  • Salt and black pepper to taste

Directions

  1. 1

Preheat your oven to 400°F (200°C).

  2. 2

In a large bowl, combine the mayonnaise, Dijon mustard, dried herbs, garlic, salt, and pepper. Mix until smooth.

  3. 3

Add the chicken pieces and toss to coat thoroughly on all sides. Let marinate for 10 minutes.

  4. 4

Pour the breadcrumbs into a shallow dish. Press each piece of chicken into the crumbs, coating all sides evenly.

  5. 5

Arrange the pieces on an ungreased baking sheet with a little space between each one.

  6. 6

Bake for 40 minutes, or until the coating is golden brown and the chicken is cooked through (internal temp 165°F / 74°C).

  7. 7

For extra crispiness, switch to the broil setting for the last 2–3 minutes — watch closely to avoid burning.

  8. 8

Serve hot with roasted potatoes, coleslaw, or a simple green salad.

💡 Chef's Tip

Swap half the breadcrumbs for Japanese panko for an extra-crunchy crust. A handful of grated Parmesan stirred into the breadcrumb mix also adds a rich, savory depth.
