🛒 Ingredients

5 servings

5
  • 1 whole chicken, cut into pieces
  • 3 tbsp mayonnaise
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 2 tomatoes, diced
  • 1 red bell pepper, sliced
  • 2 tbsp olive oil
  • 1 pinch of black pepper
  • Salt to taste
  • 2 tbsp white vinegar (for parboiling)

Directions

  1. 1

Place chicken pieces in a large pot, cover with cold water and add the vinegar. Bring to a boil and blanch for 10 minutes. Drain and set aside.

  2. 2

Heat olive oil in a deep pan over medium heat. Sauté the onion and garlic until soft and translucent, about 3 minutes.

  3. 3

Add the chicken pieces to the pan along with the diced tomatoes and bell pepper. Season with salt and pepper. Cover and cook over low heat for 30 minutes.

  4. 4

Preheat your oven to 400°F (200°C). Lightly grease a square baking dish.

  5. 5

Transfer the chicken pieces to the baking dish and coat them generously with mayonnaise on all sides.

  6. 6

Bake for 20–25 minutes until the mayonnaise is golden and the chicken is beautifully crispy. Serve hot with white rice or roasted potatoes.

💡 Chef's Tip

Mix a teaspoon of Dijon mustard into the mayonnaise before coating for an extra layer of flavor. Add potato wedges around the chicken in the baking dish for a complete one-pan meal.
