🛒 Ingredients

4 servings

4
  • 500 g (1 lb) shredded cooked chicken breast
  • 7 oz (200 g) light cream cheese
  • ¾ cup (180 ml) light sour cream or light crème fraîche
  • ½ onion, finely chopped
  • ¾ cup (80 g) light shredded cheese (cheddar or mozzarella)
  • 1 tablespoon unsalted butter
  • A few slices of fresh mozzarella
  • Salt and black pepper to taste

Directions

  1. 1

Season the shredded chicken breast with salt and pepper to taste. Set aside.

  2. 2

In a medium saucepan, melt the butter over medium heat. Add the finely chopped onion and cook, stirring, until softened and translucent, about 3–4 minutes.

  3. 3

Reduce the heat to low. Add the cream cheese and sour cream, stirring constantly — do not stop stirring or the sauce will scorch.

  4. 4

Gradually fold in the shredded cheese, a little at a time, until you have a smooth, velvety sauce.

  5. 5

Add the shredded chicken and stir quickly to coat every piece in the creamy sauce.

  6. 6

Transfer the mixture to a baking dish, lay mozzarella slices on top, and bake at 300°F (150°C) for 5 minutes until the cheese is melted and bubbly. Serve immediately.

💡 Chef's Tip

Make sure to keep the heat on low when making the sauce — cream cheese can split at high temperatures. A pinch of garlic powder or fresh thyme adds a lovely depth of flavour.
