By Marie Lefebvre · Updated November 4, 2026

This clever no-water pressure cooker method lets the chicken steam and braise entirely in its own natural juices, locking in incredible flavor and tenderness. Seasoned with fresh herbs, black pepper, and a touch of sweet paprika, it delivers a rich, deeply satisfying meal with minimal effort. A true weeknight hero that never disappoints!

🛒 Ingredients

5 servings

5
  • 1 whole chicken, cut into pieces
  • 1/2 onion, thinly sliced
  • freshly ground black pepper (to taste)
  • fresh chives, chopped (to taste)
  • fresh flat-leaf parsley, chopped (to taste)
  • sweet paprika (to taste)
  • salt (to taste)

Directions

  1. 1

Cut the chicken into even pieces and pat dry with paper towels.

  2. 2

Layer the chicken pieces in the pressure cooker with the sliced onion, black pepper, chives, and parsley. Do not add any water.

  3. 3

Seal the pressure cooker and cook on high heat for 20 minutes once full pressure is reached.

  4. 4

Remove from heat and allow pressure to release naturally before carefully opening the lid.

  5. 5

Stir in the paprika and a pinch of salt.

  6. 6

Return to medium heat with the lid off and cook for another 20 minutes until the chicken is golden and slightly caramelized.

  7. 7

Serve hot with steamed rice, roasted vegetables, or crusty bread.

💡 Chef's Tip

Never add water — the chicken generates its own steam under pressure, creating a concentrated, flavorful cooking liquid. Adjust the final open-lid cooking time based on your stove's heat output for the ideal golden finish.
