🛒 Ingredients

6 servings

6
  • 1 whole chicken (about 3 lbs / 1.5 kg)
  • 4 garlic cloves, crushed
  • 1 teaspoon fine salt
  • 1 teaspoon ground black pepper
  • 1 tablespoon smoked paprika
  • 1 tablespoon dried mixed herbs (thyme, rosemary, oregano)
  • ¾ cup (200 ml) vegetable oil

Directions

  1. 1

The night before, rub the whole chicken all over with crushed garlic, salt, black pepper, smoked paprika, and dried herbs. Cover and refrigerate overnight to allow the flavors to penetrate deeply.

  2. 2

On the day of cooking, remove the chicken from the refrigerator 30 minutes before you begin. Pour the oil into the pressure cooker and heat over medium heat for 5 minutes.

  3. 3

Drain the chicken of excess marinade and carefully place it in the hot pressure cooker. Seal the lid and cook for 20 minutes over medium-low heat.

  4. 4

Remove the pressure cooker from the heat and carefully release the steam valve. Open the lid and turn the chicken over gently using kitchen tongs.

  5. 5

Seal the lid again and cook for a further 20 minutes over low heat. Let the chicken rest for 5 minutes before carving and serving.

💡 Chef's Tip

For extra crispy, golden skin, remove the lid for the final 5 minutes of cooking and increase the heat slightly.
