8
  • 1 whole free-range chicken, cut into pieces
  • 1 large onion, finely diced
  • 2 chicken bouillon cubes
  • Crushed red pepper flakes, to taste
  • Freshly ground black pepper
  • Fresh parsley and chives, to garnish
  • 700 ml water (about 3 to 4 cups)

Directions

  1. 1

Cut the free-range chicken into even pieces and pat them dry with paper towels.

  2. 2

In a large pot or Dutch oven, sauté the diced onion over medium heat with a drizzle of oil until golden and softened.

  3. 3

Add the chicken pieces and brown them on all sides over high heat for about 5 to 7 minutes.

  4. 4

Crumble in the bouillon cubes, add the pepper and red pepper flakes, then pour in the water and stir to combine.

  5. 5

Cover and simmer over low heat for 45 minutes, or until the chicken is tender and the broth is flavorful.

  6. 6

Sprinkle with fresh parsley and chives before serving.

💡 Chef's Tip

Free-range chicken benefits from a longer, slower cook time compared to conventional chicken. For extra depth, season the pieces with spices and let them rest for 30 minutes before cooking.
