  • 4 garlic cloves, crushed
  • 1 medium onion, finely chopped
  • 1 teaspoon sweet paprika
  • 1 bunch fresh parsley
  • 3 tablespoons olive oil
  • 2 cups hot water or chicken broth
  • Salt and freshly ground black pepper to taste

    Cut the chicken into even pieces and season thoroughly with salt, pepper, crushed garlic, and paprika. Let rest for 15 minutes to allow the flavors to infuse the meat.

    Heat the olive oil in a cast-iron pot over medium-high heat. Once hot, arrange the chicken pieces in a single layer without crowding.

    Sear the chicken on all sides, turning regularly, until deeply golden and crispy all over — about 10 to 12 minutes total.

    Add the chopped onion around the chicken and cook for 2 minutes, stirring, until softened and translucent.
