6 servings

6
  • 1 kg (2.2 lb) chicken breasts
  • 2 large yellow onions, thinly sliced
  • 1 can (285 g) corn, drained
  • 200 ml (¾ cup) heavy cream
  • 150 g (5 oz) cream cheese
  • 2 garlic cloves, minced
  • Juice of 1 lemon
  • 1 tsp dried thyme
  • Salt and black pepper to taste
  • 2 tbsp olive oil
  • 50 g (½ cup) grated gruyère or cheddar

Directions

  1. 1

Season the chicken breasts with lemon juice, garlic, thyme, salt, and pepper. Let marinate for 15 minutes.

  2. 2

Heat olive oil in a skillet over medium-low heat. Cook the sliced onions for 15–20 minutes, stirring occasionally, until golden and caramelized.

  3. 3

Blend the heavy cream, cream cheese, and drained corn together until completely smooth.

  4. 4

Sear the marinated chicken in the same skillet over medium-high heat for 2–3 minutes per side until lightly browned but not fully cooked through.

  5. 5

Spread the caramelized onions in the bottom of a baking dish. Arrange the chicken on top and pour the blended cream mixture evenly over everything.

  6. 6

Sprinkle with grated cheese and bake at 180 °C (350 °F) for 25–30 minutes until the top is golden and gratinéed.

💡 Chef's Tip

A splash of dry white wine added to the onions while caramelizing adds wonderful depth. For extra richness, stir a teaspoon of Dijon mustard into the cream before blending.
