🛒 Ingredients

4 servings

4
  • 1 whole chicken, cut into pieces (or 5 drumsticks + 5 thighs)
  • 4 to 5 medium potatoes, peeled and sliced into thick rounds
  • 6 garlic cloves, minced
  • 1 medium onion, grated
  • 1 tomato, peeled, seeded and crushed (optional)
  • Olive oil
  • Salt and freshly ground black pepper
  • Dried chili flakes
  • Splash of white vinegar or lemon juice
  • Fresh flat-leaf parsley
  • Fresh basil leaves

Directions

  1. 1

Clean and pat dry the chicken pieces with paper towels, keeping the skin on.

  2. 2

Make a marinade with salt, black pepper, half the garlic, chili flakes, and a splash of vinegar or lemon juice. Coat all pieces well and let rest for at least 20 minutes.

  3. 3

Heat olive oil in a large skillet over medium-high heat. Brown the chicken pieces on all sides, keeping the marinade garlic aside, adding a few drops of water to prevent burning.

  4. 4

Set the browned chicken aside on a plate.

  5. 5

In a heavy pot or Dutch oven, heat olive oil over low heat and sauté the grated onion with the reserved garlic until soft and lightly golden.

  6. 6

Add the crushed tomato and cook for 2 to 3 minutes, stirring occasionally.

  7. 7

Add the browned chicken and potato slices. Cover and simmer on very low heat for 35 to 40 minutes, until the chicken is tender and potatoes are cooked through.

  8. 8

Taste and adjust salt, then finish with a generous handful of fresh parsley and basil before serving.

💡 Chef's Tip

Marinating the chicken overnight in the fridge gives even deeper flavor. Serve with crusty bread to mop up the aromatic cooking juices.
