🛒 Ingredients

5 servings

5
  • 1 kg (2.2 lbs) chicken thighs and drumsticks, skin removed
  • 3 medium onions, finely chopped
  • 1 whole head of garlic, crushed
  • 4 tablespoons vegetable oil
  • 4 ripe tomatoes, diced
  • Salt, to taste
  • Black pepper, to taste
  • Fresh parsley and chives, to taste
  • Water, for braising

Directions

  1. 1

Season the chicken pieces with crushed garlic, salt, and black pepper. Let them rest a few minutes while you prep the remaining ingredients.

  2. 2

Heat the oil in a heavy-bottomed pot (cast iron preferred) over medium-high heat. Brown the chicken on all sides until deeply golden.

  3. 3

Add the chopped onions and cook, stirring occasionally, until softened and lightly caramelized.

  4. 4

Add a small splash of water, stir well, and cook until nearly evaporated. Repeat this two or three times until the chicken is fully tender.

  5. 5

Stir in the diced tomatoes, adjust seasoning if needed, cover, and simmer over low heat until the sauce thickens and coats the chicken.

  6. 6

Finish with freshly chopped parsley and chives. Serve hot with white rice or creamy polenta.

💡 Chef's Tip

Cast iron distributes heat evenly and gives the chicken a richer flavor. Adding water in small increments concentrates the cooking juices into a naturally thick, flavorful sauce.
