🛒 Ingredients

4 servings

4
  • 400 g (14 oz) chicken breast, cut into cubes
  • 100 g (3.5 oz) diced smoked bacon
  • 1 tbsp margarine
  • 200 ml (¾ cup) tomato sauce
  • 1 tsp all-purpose seasoning blend (to taste)
  • ½ onion, finely chopped
  • 2 tbsp fresh parsley, chopped
  • 200 ml (¾ cup) coconut milk
  • Salt to taste

Directions

  1. 1

Melt the margarine in a large skillet over medium heat. Sauté the chopped onion and bacon until lightly golden, about 3–4 minutes.

  2. 2

Add the chicken cubes and seasoning blend. Cook, stirring occasionally, until the chicken is cooked through, about 8–10 minutes.

  3. 3

Pour in the tomato sauce and simmer for 2 minutes. Stir in the coconut milk and continue simmering for another 2 minutes.

  4. 4

Sprinkle with fresh parsley, cook for 1 more minute, then taste and adjust salt before serving hot.

💡 Chef's Tip

Serve over white rice or egg noodles to soak up the sauce. For extra richness, use full-fat coconut milk and swap margarine for butter.
