  • 1 kg (2.2 lb) chicken pieces
  • 3 zucchinis, diced
  • 1 small onion, finely chopped
  • 1 red bell pepper, sliced
  • 2 garlic cloves, minced
  • Juice of 1 lemon
  • 1 tablespoon sweet paprika
  • Salt and freshly ground black pepper to taste
  • 2 tablespoons olive oil
  • 200 ml (¾ cup) chicken broth
  • 100 ml (⅓ cup) heavy cream (optional)

Directions

    Season the chicken pieces with lemon juice, paprika, salt and pepper. Let marinate for 20 minutes at room temperature.

    Heat the olive oil in a large heavy-bottomed pot over medium heat. Sauté the onion and garlic for 3 minutes until soft and fragrant.

    Add the chicken pieces and brown on all sides for 5–6 minutes.

    Stir in the bell pepper and zucchini, mix well and cook for 3 more minutes.

    Pour in the chicken broth, cover, and simmer over low heat for 25 minutes until the chicken is cooked through.

    If using, stir in the cream, simmer uncovered for 5 minutes, adjust seasoning and serve.

Serve over fluffy white rice or couscous to soak up the flavorful broth. A sprinkle of fresh parsley or basil adds a lovely finishing touch.
