🛒 Ingredients

6 servings

6
  • 1 kg chicken breasts (frozen or fresh)
  • 2 medium tomatoes, diced
  • 1 large onion, sliced
  • 2 tablespoons oil
  • 1 chicken stock cube
  • Salt to taste
  • 1 teaspoon sweet paprika (or 2 tbsp tomato sauce)
  • Fresh parsley to taste
  • Dried oregano to taste

Directions

  1. 1

Place all ingredients into the pressure cooker at once — no need to thaw the chicken: tomatoes, onion, oil, stock cube, paprika and salt.

  2. 2

Add a pinch of dried oregano if you like a more herbaceous flavour.

  3. 3

Seal the lid and bring to high heat. Once the valve starts releasing steam, reduce to medium heat and cook for 8 minutes.

  4. 4

Turn off the heat and allow the pressure to release naturally. Sprinkle with fresh parsley and serve with the cooking broth.

💡 Chef's Tip

Don't exceed 8 minutes of pressure cooking to keep the chicken moist. The leftover broth is perfect for cooking rice or pasta as a side dish.
