🛒 Ingredients

2 servings

2
  • 600 g chicken, cut into small pieces
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons olive oil
  • 6 garlic cloves, thinly sliced
  • Fresh parsley, chopped, to taste
  • Juice of half a lemon

Directions

  1. 1

Preheat the oven to 200 °C (400 °F). In a large bowl, season the chicken pieces with salt and pepper.

  2. 2

Add the sliced garlic, olive oil and lemon juice. Toss well until every piece is evenly coated.

  3. 3

Arrange the chicken in a single layer in a non-stick baking dish.

  4. 4

Roast for 35–40 minutes, turning the pieces every 10 minutes so the garlic toasts without burning.

  5. 5

Remove from the oven and stir the chicken in the pan juices to coat and add a glossy finish. Scatter fresh parsley on top and serve at once.

💡 Chef's Tip

For deeper flavour, marinate the chicken in the garlic, olive oil and lemon mixture for 30 minutes in the fridge before roasting.
