🛒 Ingredients

6 servings

6
  • 2 kg chicken thighs and drumsticks, seasoned with salt, black pepper and lemon juice
  • 3 tablespoons margarine or unsalted butter
  • 3 medium potatoes, peeled and cut into thick rounds
  • 2 carrots, peeled and cut into thick rounds
  • 200 ml fresh orange juice (about 2 oranges)
  • Zest of 1 orange
  • 4 sprigs fresh flat-leaf parsley, washed and chopped

Directions

  1. 1

Arrange the chicken pieces in a lightly greased oven-safe dish.

  2. 2

Coat the chicken generously with margarine or butter, then scatter the potato and carrot rounds around the chicken.

  3. 3

Cover the dish tightly with aluminum foil and place in a cold oven set to 200 °C (390 °F). Bake for about 1 hour.

  4. 4

Remove the foil, pour the orange juice over the chicken and vegetables, and return to the oven for 20 to 35 minutes until the chicken is golden and cooked through.

  5. 5

Remove from the oven, sprinkle orange zest and chopped parsley over the vegetables, and serve immediately.

💡 Chef's Tip

For extra crispy skin, switch on the broiler for the last 5 minutes. Swap margarine for ghee for a richer, nuttier flavour.
