🛒 Ingredients

4 servings

4
  • 500g chicken breast, diced
  • 1 cup steamed broccoli florets
  • 1 cup julienned carrots, cooked
  • 1/2 onion, finely chopped
  • 2 tablespoons olive oil
  • 1 tablespoon cornstarch
  • 1/4 cup soy sauce
  • 1/2 cup water
  • Juice of half a lemon
  • Salt and black pepper to taste

Directions

  1. 1

Season the diced chicken with lemon juice, salt, and black pepper. Let marinate for 10 minutes.

  2. 2

Heat 1 tablespoon of olive oil in a pan over medium-high heat. Sauté the chicken until golden brown on all sides, then set aside.

  3. 3

In a bowl, whisk together the cornstarch, soy sauce, and water until smooth. Set aside.

  4. 4

In a large skillet, sauté the onion with the remaining olive oil over medium-high heat until translucent.

  5. 5

Add the reserved chicken to the skillet and stir to combine.

  6. 6

Pour in half the soy sauce mixture and let it caramelize slightly for about 2 minutes.

  7. 7

Add the cooked carrots and broccoli, then pour in the remaining sauce.

  8. 8

Stir gently until the sauce coats all the ingredients evenly. Adjust seasoning and serve immediately over steamed rice.

💡 Chef's Tip

For a glossier sauce, add a drizzle of honey to the soy mixture. Feel free to swap the vegetables for green beans, bell peppers, or mushrooms depending on what's in season.
