🛒 Ingredients

1 servings

1
  • 1 can sweetened condensed milk (397 g)
  • 1 measure of whole milk (use the empty can)
  • 3 eggs
  • 10 tbsp sugar (for the caramel)
  • 3 tbsp sugar

Directions

  1. 1

In a bowl, combine the condensed milk, the measure of milk and the eggs. Whisk briskly by hand until the mixture is completely smooth. Set aside.

  2. 2

Make the caramel: pour the sugar into a non-stick saucepan and heat over medium. Swirl the pan in circles — don't stir with a spoon — until it turns an amber caramel.

  3. 3

Immediately pour the caramel into the base of a ring flan mould — no need to grease it — and let it set for a moment.

  4. 4

Pour the reserved custard over the cooled caramel. Bake at 180 °C (350 °F) for about 30 minutes, until golden and set. No water bath needed.

  5. 5

Let cool to room temperature, then chill overnight. The next day, run a knife around the edge and unmould gently: the caramel coats the flan and flavours it beautifully.

💡 Chef's Tip

For a perfect caramel, never stir with a spoon — just swirl the pan over the heat. A real pudim is best served ice-cold after a full night in the fridge; that patience is what gives it its silky, melting texture.
