🛒 Ingredients

8 servings

8
  • 1 can (395 g) sweetened condensed milk
  • 1 box (200 g) table cream or heavy cream
  • 1 packet flavored gelatin dessert mix (maria-mole), any flavor
  • 250 ml warm water
  • 1 cup sugar, for the caramel

Directions

  1. 1

Make the caramel: pour the sugar into a ring mould and melt it over medium heat until it turns amber. Stir with a wooden spoon so it doesn't burn, then coat the whole inside of the mould and let it set.

  2. 2

Dissolve the flavored gelatin mix in the 250 ml of warm water, stirring until no grains remain.

  3. 3

Pour that into a blender, add the sweetened condensed milk and the cream, and blend for about 3 minutes until perfectly smooth.

  4. 4

Carefully pour the mixture into the caramel-lined mould.

  5. 5

Refrigerate for at least 3 hours, ideally overnight: the cold is what sets the flan.

  6. 6

To serve, run a thin knife around the edge, place a shallow plate over the mould and flip it over in one confident motion. The caramel will flow over the top by itself.

💡 Chef's Tip

Don't over-blend, or you'll whip air into the mixture and end up with bubbles and a less clean slice. For stress-free unmoulding, dip the base of the mould in hot water for a few seconds before flipping.
