🛒 Ingredients

2 servings

2
  • 1 kg (2.2 lb) pork belly, cut into small cubes
  • Salt and freshly ground black pepper to taste
  • 1 cup (120 g) all-purpose flour
  • Juice of half a lemon
  • 500 ml (2 cups) vegetable oil for frying

Directions

  1. 1

Cut the pork belly into small, even pieces. Season with salt, pepper, and lemon juice. Let the meat rest for 15 minutes so the seasoning fully penetrates.

  2. 2

Transfer the seasoned pieces into a container with a tight-fitting lid. Add the flour, close the lid, and shake vigorously until each piece is evenly coated with a thin, uniform layer of flour.

  3. 3

Heat the oil in a deep pan or fryer to 170–180 °C (340–360 °F). Add the pork — pieces should be mostly submerged. Fry, stirring occasionally, for 20–25 minutes until deeply golden and crispy.

  4. 4

Drain on paper towels and serve immediately with a squeeze of lemon or your favorite dipping sauce.

💡 Chef's Tip

The no-splatter secret: pat the pork pieces completely dry with paper towels before coating in flour. Dry meat keeps the oil calm. Avoid overcrowding the pan — fry in two batches if needed for even, consistent crunch.
