🛒 Ingredients

4 servings

4
  • 2 cups cooked white rice
  • 1 tablespoon finely chopped onion
  • ½ cup sliced button mushrooms
  • 1 tablespoon unsalted butter
  • ¼ cup dry white wine
  • ½ cup heavy cream
  • ½ cup grated parmesan cheese
  • Salt and freshly ground black pepper to taste

Directions

  1. 1

Melt butter in a large skillet over medium heat. Add the chopped onion and cook for 2 minutes, stirring often, until softened and lightly golden.

  2. 2

Add the sliced mushrooms and sauté for 3 minutes until tender. Pour in the white wine and let it reduce by half over high heat.

  3. 3

Reduce heat to low and stir in the cooked rice, coating the grains evenly with the mushroom mixture.

  4. 4

Pour in the heavy cream and half the parmesan. Stir gently until the sauce is smooth and creamy, about 2 minutes.

  5. 5

Season generously with salt and pepper. Serve immediately, topped with the remaining parmesan.

💡 Chef's Tip

This dish is a fantastic way to use leftover rice. For extra depth, swap button mushrooms for a mix of shiitake and cremini. A splash of truffle oil just before serving takes it to the next level.
