🛒 Ingredients

6 servings

6
  • 500 g cooked garlic rice
  • 100 g garlic (about 2 heads)
  • 3 tablespoons olive oil
  • 2 bunches fresh broccoli
  • 20 g baking soda
  • 3 liters boiling water
  • Salt to taste

Directions

  1. 1

Prepare the broccoli by peeling the stalks with a knife to remove the fibrous skin. Keep the stalks and leaves — nothing goes to waste!

  2. 2

Cook the broccoli in boiling salted water with the baking soda until the stalks are tender. Drain and set aside.

  3. 3

In a large pan, sauté the minced garlic in olive oil until golden and fragrant.

  4. 4

Add the drained broccoli and stir-fry for a few minutes. Fold in the cooked rice and toss well until everything is evenly combined and strikingly green.

💡 Chef's Tip

The secret to that vivid green color is baking soda in the cooking water — it locks in the broccoli's chlorophyll. Don't overcook or you'll lose that stunning color.
