  • 4 tablespoons olive oil
  • 2 cups long-grain rice
  • 2 vegetable bouillon cubes
  • 4 cups boiling water
  • 2 tablespoons butter
  • 2 tablespoons grated onion
  • 100 g sliced mushrooms
  • 100 g diced cooked ham
  • 1/4 cup dry white wine
  • 200 ml heavy cream
  • 2 cups grated parmesan cheese
  • 2 tablespoons dried chopped parsley

Directions

  1. 1

    Preheat oven to 400 °F (200 °C).

  2. 2

Heat olive oil in a saucepan over medium heat and toast the rice for 3 minutes, stirring, until lightly golden.

  3. 3

Dissolve the bouillon cubes in boiling water and pour over the rice. Stir to combine.

  4. 4

Partially cover and cook over low heat until all the liquid is absorbed.

  5. 5

Remove from heat, cover fully, and let rest for 10 minutes. Fluff with a fork and set aside.

  6. 6

In a skillet, melt butter and sauté the grated onion until translucent.

  7. 7

Add mushrooms and ham and cook over high heat for 3–4 minutes.

  8. 8

Deglaze with white wine and let the alcohol evaporate completely.

  9. 9

Stir in the heavy cream and half the parmesan over low heat. Mix gently.

  10. 10

Fold in the cooked rice until evenly combined.

  11. 11

Transfer to a buttered baking dish, top with remaining parmesan, and bake for 15 minutes until golden. Sprinkle with parsley before serving.

💡 Chef's Tip

Swap ham for smoked turkey for a lighter version. For extra depth of flavour, use a mix of cremini and shiitake mushrooms. A pinch of nutmeg in the cream sauce adds a lovely warmth.
