  • 1/4 head of cabbage
  • 1 whole clove
  • 1 tsp allspice

  • 4 sprigs fresh parsley
  • 4 sprigs fresh dill
  • 1 tsp black pepper
  • 1 tbsp salt

    Place the chicken thighs in a large Dutch oven or stockpot. Cover completely with cold water.

    Bring to a boil, then reduce the heat and simmer for 2 to 2.5 hours. Regularly skim off any impurities that rise to the surface to ensure a clear broth.

    After 1.5 hours of cooking, add the chopped vegetables and spices (clove, allspice, bay leaves, parsley, dill, pepper, and salt).

    Continue cooking until the chicken is very tender and the flavors are perfectly blended.

    Remove the chicken from the broth. Pour the broth with the vegetables into bowls and serve hot.

Regularly skim the broth during the first hour to achieve a crystal-clear consistency. Prepare it the day before: broth rested in the fridge settles better. Serve with noodles, rice, or rye bread.
