🛒 Ingredients

6 servings

6
  • 2 kg skinless salmon fillet, seasoned with salt and pepper
  • 2 kg pre-cooked potatoes, sliced into rounds
  • 4 garlic cloves, thinly sliced
  • 2 medium onions, diced
  • 1 medium red bell pepper, sliced into rings
  • 3 tablespoons salted butter
  • 200 g cherry tomatoes

Directions

  1. 1

Preheat your oven to 200 °C (390 °F) and lightly grease a large baking dish.

  2. 2

Spread the pre-cooked potato slices evenly across the bottom of the dish.

  3. 3

Arrange the salmon pieces on top of the potatoes, distributing them evenly.

  4. 4

Scatter the diced onions around and over the salmon.

  5. 5

Place small knobs of salted butter directly on top of the salmon to keep it moist during baking.

  6. 6

Add the sliced garlic and bell pepper rings over the fish.

  7. 7

Scatter the cherry tomatoes across the dish to add color and a burst of freshness.

  8. 8

Bake uncovered for 30 minutes, until the salmon is cooked through and lightly golden.

💡 Chef's Tip

For extra depth of flavor, drizzle a little lemon juice and olive oil over the salmon before baking. Fresh dill or flat-leaf parsley sprinkled on top just before serving elevates this dish beautifully.
