Shrimp Saganaki with Feta

- 17.6 oz large shrimp
- 3 tbsp olive oil
- 1 onion, chopped
- 1 pinch fresh parsley, chopped
- 1 cup dry white wine
- 1 (14.5 oz) can diced tomatoes
- 1/2 tsp garlic, minced
- 7 oz feta cheese, cubed

Pour water into a saucepan and bring to a boil. Add shrimp and cook for 5 minutes. Drain, reserving the cooking liquid.

Heat 2 tbsp olive oil in a saucepan. Add the onion and cook, stirring, until tender.

Stir in the parsley, white wine, tomatoes, garlic, and the remaining olive oil. Simmer for 30 minutes, stirring occasionally, until thickened.

Let the shrimp cool. Remove the legs by pinching them, then gently peel, keeping the head and tail intact.

Add the shrimp to the sauce and simmer for 5 minutes. Stir in the feta and remove from heat. Let stand until the cheese begins to melt.
