  • 1 yellow bell pepper
  • 2 cloves garlic, minced
  • 1 1/4 cups paella rice
  • 3 1/3 cups vegetable broth

  • 14 oz frozen seafood mix
  • Juice of 1/2 lemon
  • A handful of fresh parsley, chopped
