This Brazilian-style beef stroganoff is a weeknight hero in our home. The beef turns meltingly tender in a creamy, lightly spiced tomato sauce, and it all comes together in under an hour. Serve it over white rice with shoestring potatoes for the full experience.

🛒 Ingredients

8 servings

8
  • 1 tub of thick crème fraîche or sour cream (200 g)
  • 2 tablespoons margarine
  • 2 medium onions, grated
  • 5 ripe tomatoes, peeled, seeded and chopped
  • 3 garlic cloves, minced
  • 2 tablespoons oil
  • 750 g beef (sirloin or rump), cut into thin strips
  • 1 tablespoon all-purpose flour
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon mustard
  • 3 tablespoons ketchup
  • 1 tablespoon sugar
  • Salt and seasonings to taste

Directions

  1. 1

In a pan, combine the margarine, onions, tomatoes and garlic. Cook over medium heat until everything is soft.

  2. 2

Take off the heat and set this mixture aside.

  3. 3

In the same pan, heat the oil and sear the beef without stirring too much, until nicely browned.

  4. 4

Sprinkle the flour over the beef and keep browning, stirring constantly.

  5. 5

Add the reserved mixture along with the Worcestershire sauce, mustard, ketchup, sugar, salt and seasonings. Simmer for about 10 minutes.

  6. 6

Pour in the cream and keep cooking, stirring the whole time.

  7. 7

As soon as it boils, adjust the seasoning and remove from the heat.

💡 Chef's Tip

Sear the beef in small batches so it browns instead of steaming, and stir the cream in off the heat to keep the sauce silky.
