🛒 Ingredients

8 servings

8
  • 1 kg (2.2 lbs) chicken breast fillets
  • 1 medium onion, finely diced
  • 2 garlic cloves, minced
  • 4 tablespoons butter
  • 3 tablespoons tomato paste
  • 200 g (7 oz) sliced button mushrooms
  • 2 tablespoons ketchup
  • 2 tablespoons Dijon mustard
  • 300 ml sour cream or heavy cream
  • 1 teaspoon smoked paprika
  • Salt and freshly ground black pepper

Directions

  1. 1

Cut the chicken into small, even bite-sized pieces.

  2. 2

Mix the minced garlic with a pinch of salt and the smoked paprika, then coat the chicken pieces thoroughly.

  3. 3

Melt butter in a large skillet over medium heat. Sauté the onion until soft and translucent, about 3 minutes. Add the mushrooms and cook for 3 more minutes.

  4. 4

Stir in the tomato paste and the seasoned chicken. Cover and simmer over low heat for 15 minutes, stirring occasionally, until cooked through.

  5. 5

Stir in the ketchup and Dijon mustard, mixing well to combine.

  6. 6

Remove from heat and fold in the cream. Adjust seasoning and serve immediately over white rice with crispy straw potatoes.

💡 Chef's Tip

For extra depth, deglaze the pan with a splash of dry white wine before adding the tomato paste. Smoked paprika can be swapped for sweet paprika for a milder flavour.
