🛒 Ingredients

5 servings

5
  • 2 cups all-purpose flour
  • ½ cup cornstarch
  • 5 tablespoons olive oil
  • Salt and black pepper to taste
  • 50 g grated Parmesan or Gruyère cheese
  • 350 ml whole milk
  • 2 large eggs
  • 3 garlic cloves, minced
  • 350 g desalted cod fillet
  • 100 g pitted black olives, chopped
  • 100 g cream cheese
  • 1 bay leaf
  • Fresh parsley and chives to taste
  • Olive oil for sautéing

Directions

  1. 1

Soak the cod in cold water for 24 hours, changing the water 2–3 times. Drain well, remove the skin and bones, and flake the fish into small pieces.

  2. 2

Heat a drizzle of olive oil in a skillet over medium heat. Sauté the minced garlic with the bay leaf until fragrant and lightly golden.

  3. 3

Add the flaked cod and cook for about 5 minutes, stirring frequently to let the flavors meld.

  4. 4

Stir in the chopped black olives and cream cheese. Season with salt and pepper, scatter in the fresh herbs, mix well, and set the filling aside.

  5. 5

Make the batter: place the flour, cornstarch, eggs, milk, olive oil, salt, and pepper in a blender. Blend until completely smooth.

  6. 6

Preheat the oven to 180 °C (350 °F). Grease and flour a rectangular baking dish.

  7. 7

Pour half the batter into the prepared dish. Spread the cod filling evenly over it, then pour the remaining batter on top.

  8. 8

Sprinkle grated cheese over the surface and bake for 35 minutes until golden. Allow to rest for 10 minutes before slicing and serving.

💡 Chef's Tip

For a flavor boost, fold a handful of sun-dried tomatoes into the filling before assembling. Leftovers keep in the fridge for 2 days and reheat beautifully at 160 °C.
