Directions
- 1
Ask your fishmonger to butterfly the fish: remove the backbone and open it flat like a book, skin side facing out.
- 2
Generously brush a baking dish with olive oil and place the fish skin-side down.
- 3
In a bowl, combine garlic, onion, tomato, parsley, cilantro, lemon juice and salt. Mix well and spread evenly over the entire flesh of the fish.
- 4
Let the fish marinate at room temperature for 30 minutes so the flavors fully penetrate the flesh.
- 5
Drizzle with olive oil, cover tightly with aluminum foil, and bake in a preheated oven at 356°F (180°C) for 30 minutes.
- 6
Remove the foil and continue baking for a further 10–15 minutes, until the cooking juices have evaporated and the surface is lightly golden.
- 7
Serve immediately alongside white rice, roasted vegetables, or a crisp green salad.
💡 Chef's Tip
For an indulgent finish, spoon a homemade shrimp sauce over the fish just before serving. Laying thin lemon slices directly on the flesh before baking delivers an even brighter citrus aroma.
