  • 7 oz raw jumbo shrimp
  • 1 fresh green chili, minced
  • 3 garlic cloves, crushed
  • 1 bunch fresh cilantro
  • 1 tbsp white sugar
  • Juice of 1 lime
  • 3 tbsp fish sauce
  • 2 tbsp peanut oil
  • 1-inch piece fresh ginger, minced
  • 8 scallions, sliced
  • 1 red bell pepper, sliced
  • 3 oz water chestnuts
  • 3.5 oz fresh bean sprouts
  • 1 tbsp soy sauce
  • Rice noodles (for serving)
  • Fresh lime wedges (for serving)

    Place the shrimp in a bowl. Put the chili, garlic, cilantro stems (cut with scissors), and sugar in a spice grinder. Blend until a paste forms. Add half of the lime juice and the fish sauce, then pour this mixture over the shrimp. Let rest for 10 minutes.

    Heat 1 tbsp of oil in a wok over high heat. Add the ginger and scallions; stir-fry for 1 minute. Add the red bell pepper and stir-fry for 1 minute until softened. Add the water chestnuts and bean sprouts, tossing until the sprouts wilt slightly. Stir in the soy sauce and ground black pepper. Transfer to a serving dish.

    Heat the remaining oil in the wok. Add the shrimp (removing them from their marinade) and stir for 1-2 minutes until they turn pink. Pour in the remaining marinade, stir quickly, then pour everything over the vegetables. Sprinkle with fresh cilantro leaves and the remaining lime juice. Serve immediately over rice noodles with lime wedges.

💡 Chef's Tip

Prepare all ingredients before starting to cook. Shrimp cook very quickly—stop as soon as they turn pink so they stay tender. Variation: replace the shrimp with chicken or tofu.
