6
  • 4 tablespoons extra virgin olive oil
  • 1 small onion, finely grated
  • 1 tablespoon garlic paste
  • 500 g (1.1 lb) ground beef
  • 2 teaspoons salt
  • Freshly ground black pepper
  • 2 tablespoons all-purpose flour (for the filling)
  • 1 cup (250 ml) whole milk (for the filling)
  • 3 hard-boiled eggs, peeled and chopped
  • ½ cup pitted green olives, chopped
  • 3 cups all-purpose flour (for the dough)
  • 1 whole egg
  • 1 cup (200 g) unsalted butter or margarine, softened
  • 1 tablespoon baking powder
  • 2 tablespoons milk (for the dough)
  • 1 teaspoon salt (for the dough)
  • 1 egg yolk for egg wash

Directions

  1. 1

Heat olive oil in a medium saucepan over medium heat. Sauté the grated onion and garlic paste for about 2 minutes until softened and fragrant.

  2. 2

Add the ground beef and cook, stirring occasionally, until all liquid has evaporated. Season with salt and pepper.

  3. 3

Dissolve the flour in cold milk, pour into the pan and cook over low heat, stirring constantly, until the sauce thickens to a creamy consistency.

  4. 4

Remove from heat. Fold in the chopped hard-boiled eggs and green olives. Mix well and set aside to cool slightly.

  5. 5

Make the dough: in a large bowl, combine the flour, egg, softened butter, baking powder, milk, and salt. Knead until the dough is smooth and uniform.

  6. 6

    Preheat the oven to 350 °F (180 °C).

  7. 7

Divide the dough into 3 equal portions. Press 2 portions into the bottom and up the sides of a medium baking dish.

  8. 8

Spoon the filling into the dish and spread evenly with the back of a spoon.

  9. 9

Roll the remaining dough into strips and arrange them in a lattice pattern over the top. Brush generously with the egg yolk.

  10. 10

Bake for 35 minutes or until deep golden brown. Rest for 10 minutes before slicing and serving.

💡 Chef's Tip

For an extra-flaky crust, use cold butter cut into small cubes instead of softened butter. You can also swap half the green olives for capers to add a brinier, more Mediterranean character to the filling.
