Directions
- 1
Sauté the onion in olive oil over medium heat until golden. Add the diced tomatoes and cook for 3 minutes, stirring occasionally.
- 2
Add the flaked cod, stir to combine and cook for 5 minutes. Stir in the fresh herbs and olives. Taste before adding salt — cod can still be quite salty. Cover and simmer over low heat for 15 minutes.
- 3
Preheat oven to 355 °F (180 °C). Blend the milk, oil, eggs, cornstarch, grated cheese and a pinch of salt until completely smooth.
- 4
Add the baking powder to the blender and pulse a few more seconds.
- 5
Pour the batter into a lightly greased baking dish. Spoon the cod mixture over the top — it will naturally settle into the batter as it bakes.
- 6
Bake for 30–45 minutes, or until a toothpick inserted in the center comes out clean and the surface is golden brown. Rest 5 minutes before slicing.
💡 Chef's Tip
Make sure your cod is thoroughly desalted by soaking it in cold water for 24–48 hours in the fridge, changing the water at least twice. Leftovers reheat beautifully the next day.
