🛒 Ingredients

4 servings

4
  • 400 g (14 oz) powdered whole milk
  • 400 g (14 oz) granulated sugar
  • 200 g (7 oz) sweetened cocoa powder
  • 1 tablespoon unsalted margarine
  • 200 ml (¾ cup) coconut milk
  • 1 can (395 g / 14 oz) sweetened condensed milk
  • 1 egg yolk
  • 100 g (1 cup) shredded coconut
  • a few drops of pure vanilla extract
  • 1 tablespoon unsalted butter

Directions

  1. 1

In a large bowl, combine the powdered milk, sugar, cocoa powder, and margarine. Knead with your hands until the mixture comes together into a smooth, pliable dough with no dry patches. Set aside.

  2. 2

Make the filling: in a saucepan over medium heat, stir together the condensed milk, coconut milk, egg yolk, shredded coconut, vanilla, and butter. Cook, stirring constantly, until the mixture thickens and pulls away cleanly from the sides of the pan (8–10 min). Microwave alternative: 6 minutes, stirring every 2 minutes.

  3. 3

Allow the filling to cool slightly, then roll into small oval shapes using lightly buttered hands. Chill in the fridge for 10 minutes to firm up.

  4. 4

Take a portion of cocoa dough, flatten it in your palm, place a filling piece in the center, and fold the dough around it, rolling between your palms until smooth and evenly shaped.

  5. 5

Arrange on a tray, optionally roll in shredded coconut or cocoa powder, and refrigerate for at least 30 minutes before serving. Keep in an airtight container in the fridge for up to 5 days.

💡 Chef's Tip

If the dough feels too dry, add a few drops of milk; if too sticky, dust in a little more powdered milk. For a festive touch, roll the finished bonbons in rainbow sprinkles, crushed pistachios, or fine desiccated coconut.
