Directions
- 1
Season the trout fillets on both sides with salt, pepper and lemon juice. Set aside for 5 minutes to absorb the flavours.
- 2
Melt the butter in a large non-stick frying pan over medium heat. Add the chopped mushrooms and sauté for about 3 minutes until lightly golden.
- 3
Stir in the capers and parsley, then remove the mixture from the pan and set aside in a bowl.
- 4
In the same pan over medium-high heat, place the fillets skin-side down. Cook for 3–4 minutes without moving them until the skin is crispy and golden.
- 5
Flip the fillets carefully and cook for a further 1–2 minutes until the flesh is just cooked through and opaque.
- 6
Return the mushroom and caper mixture to the pan, gently combine around the fillets and serve immediately.
💡 Chef's Tip
Pat the fillets dry with kitchen paper before seasoning — this is the key to perfectly crispy skin. Resist the urge to move the fish while it cooks skin-side down.
