Turkey Meatloaf with BBQ Sauce

- 1 large onion
- 1 clove garlic, peeled and crushed
- 2 tablespoons Worcestershire sauce
- 3 teaspoons tomato paste
- 1.1 lbs ground turkey
- 1 large egg
- 3/4 cup breadcrumbs
- 2 tablespoons barbecue sauce
- Two 15-oz cans cannellini beans
- 2 tablespoons chopped fresh parsley

Preheat the oven to 350°F (320°F for fan ovens). Heat the olive oil in a large skillet and cook the onion for 8-10 minutes until tender. Add the crushed garlic, Worcestershire sauce, and 2 teaspoons of tomato paste. Mix until fully combined and let cool.

In a large bowl, combine the ground turkey, egg, breadcrumbs, and the cooled onion mixture. Season generously with salt and pepper. Mix well, then shape into a rectangular loaf. Place in a baking dish and spread 2 tablespoons of barbecue sauce over the top.

Bake for 30 minutes. Meanwhile, drain one can of cannellini beans and pour both cans into a bowl. Add the remaining barbecue sauce and the remaining tomato paste. Season and set aside.

After 30 minutes of cooking, scatter the beans around the meatloaf and continue baking for an additional 15 minutes until the loaf is cooked through and the beans are hot. Sprinkle with fresh parsley and serve the meatloaf in slices.
